I’m no chef, but I love to cook! I also love when food is both yummy and healthy. Don’t you just love a fresh, flavorful corn salad recipe? I know I do. Well, actually I just love corn however it comes into my dreary, little life. That’s one of the reasons I made this fresh, light corn salad on a hot Spring day. I think corn is my favorite vegetable. It’s sweet, crunchy, and has a great texture. I also think corn adds a muted brightness to just about any dish. Simply LOVE it and I LOVE corn salad!
Nowadays, folks are calling it cowboy caviar. Whatever.
Corn salad is a yummy mixture of protein, and acidic flavors with a natural sweetness. It’s heavy on flavor and low on the bad stuff.
Corn works well for my healthy eating and low-calorie lifestyle!
I’m on the WW plan (or Weight Watchers) and this is an incredible option for the WW Blue plan. Corn is actually zero Smart Points which means I can eat it without it working against my daily allotment of points! However, just as with fruit -which is also zero Smart Points – I understand I can’t eat a lot of it at one time but I do indulge and it’s freeing! Such liberty to eat what you like, right?
Moderation is important in your spiritual walk with Jesus and it’s important in maintaining balanced eating too. I guess moderation is key in just about every part of life. I’m working on that balance.

Now, for my delicious corn salad recipe… you’ve waited long enough!
This corn salad is super easy and extraordinarily delish to boot! It’s pretty much the only I’ll eat a green salad. Hey, are you a green salad eater? I really am not. But, sometimes I make a bed of leafy greens and top it with this corn salad. It’s the only way I eat and enjoy it. If you’re a green salad lover, please share your tips below to help me embrace eating them! I really don’t dig them at all. *sigh*
At any rate, this corn salad has black beans which supply just enough protein to fill me up – that’s important. Filling and tasty – that’ ‘s a good combination!
My Delicious and EASY Corn Salad
- 2 ears of corn, shaved from the cob
- 1 teaspoon lime juice (optional)
- 3 tablespoons cilantro, chopped
- 1 cup cherry tomatoes, halved or quartered
- 2 tablespoons extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 jalapeno, chopped (remove the ribs for a less spicy kick)
- 1/2 cup black beans
- 1/2 teaspoon oregano
- 1/4 teaspoon of Lankato monkfruit (optional)
- Salt and pepper to taste
Instructions for my yummy Green Corn Salad
- Cut the fresh, uncooked corn kernels from the cob and place them into a large bowl.
- Add the remaining ingredients to the bowl and stir to combine.
- Cover and let sit for at least 15 minutes to give the flavors a chance to shake, rattle, and roll! Or in other words, for the flavors to come together.
Get Creative…Add some other stuff!

You can also add some lemon pepper (pictured above) to this salad. It’s amazing with it! I found this one at… of all places …Ross! Never skip their spices, you can find some really cool ones there!
Other add-ins are: ranch dressing for creaminess, mayo, brown mustard, or even pesto.
One more way to enjoy this salad…
My sweet daughter-in-law asked if I’d have this salad with chips and salsa. My reply was something like “yeah when I lose ten pounds.” I was being dramatic, actually, I could. Anyone could! Live your life! This would make an amazing salsa or a topping for baked fish or chicken.
Honestly, I love this salad …just as it is…as a salad, but I hope I got your creative juices going. I hope you’ll like it too!
